Description

A comforting and hearty casserole featuring gooey cheese, crispy tater tots, and healthy veggies, perfect for family gatherings.


Ingredients

Scale
  • 1 Tablespoon Olive Oil
  • 1 Pound Ground Meat (Beef, Turkey, or Chicken)
  • 1 Green Pepper
  • 1 Yellow Pepper
  • 1 Orange Pepper
  • ½ Red Onion
  • 2 Teaspoons Minced Garlic
  • 1 Teaspoon Black Pepper
  • ¼ Teaspoon Salt
  • 1 Teaspoon Italian Seasoning
  • 1 Can Cream of Mushroom (or Cream of Chicken)
  • 1 Pound Tater Tots
  • ¾ Cup Shredded Cheese (Your Choice)

Instructions

  1. Chop the vegetables.
  2. Heat oil in a pan over medium heat, add chopped vegetables, and cook for a few minutes while stirring.
  3. Add the ground meat and break it apart with a spatula.
  4. As the meat browns, mix in minced garlic, black pepper, salt, and Italian seasoning.
  5. Once the meat is cooked, reduce heat to low and stir in the can of cream of mushroom. Mix well and let simmer.
  6. Pour the mixture into a 2-quart baking dish.
  7. Top with frozen tater tots and your choice of cheese.
  8. Bake in a preheated oven at 350°F for 35-40 minutes or until tater tots are golden and cheese is bubbly.

Notes

This casserole can be prepared ahead of time and frozen before baking. Great for families and picky eaters!
