Description

A quick and cozy dinner delight combining cauliflower rice, savory sausages, and creamy cheese.


Ingredients

Scale
  • 16 ounces cauliflower rice
  • 1 tablespoon avocado oil
  • 24 pre-cooked sausages or brats
  • 2 cheese wedges (Kerrygold Dubliner or Laughing Cow Swiss)
  • 1 green onion, chopped
  • Sprinkle of garlic salt
  • Sprinkle of black pepper

Instructions

  1. Slice the sausages into bite-sized pieces and set aside.
  2. In a skillet, heat 1 tablespoon of avocado oil over medium-high heat.
  3. Add cauliflower rice and sauté for 3-5 minutes until it softens, keeping it uncovered.
  4. Add the sliced sausages and cook until the cauliflower is soft and sausages are slightly browned.
  5. Remove from heat and stir in cheese wedges until they melt into a creamy sauce.
  6. Garnish with fresh chopped green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat over low heat or in the microwave.
