Ingredients

- 16 ounces cauliflower rice
- 1 tablespoon avocado oil
- 2–4 pre-cooked sausages or brats
- 2 cheese wedges (Kerrygold Dubliner or Laughing Cow Swiss)
- 1 green onion, chopped
- Sprinkle of garlic salt
- Sprinkle of black pepper
Instructions
- Slice the sausages into bite-sized pieces and set aside.
- In a skillet, heat 1 tablespoon of avocado oil over medium-high heat.
- Add cauliflower rice and sauté for 3-5 minutes until it softens, keeping it uncovered.
- Add the sliced sausages and cook until the cauliflower is soft and sausages are slightly browned.
- Remove from heat and stir in cheese wedges until they melt into a creamy sauce.
- Garnish with fresh chopped green onions before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat over low heat or in the microwave.
