Description

A comforting dish of roasted baby potatoes and smoked sausage, topped with melted cheddar cheese and ranch seasoning for a flavorful family meal.


Ingredients

  • 1 pound smoked sausage (halal-certified, no pork)
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix (halal-certified)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes and cut them in half or quarters.
  3. Cut the smoked sausage into 1/4-inch rounds.
  4. In a small bowl, combine the ranch seasoning, garlic powder, onion powder, and black pepper.
  5. In a large bowl, toss the potatoes with olive oil and half of the ranch seasoning mix until well coated.
  6. Line a baking sheet with parchment paper or lightly grease it.
  7. Spread the seasoned potatoes on the sheet and scatter the sliced sausage on top.
  8. Roast for 35-40 minutes, stirring halfway through for even cooking.
  9. Add the shredded cheddar cheese and pop it back in the oven for an additional 5 minutes until melted and bubbly.
  10. Garnish with fresh parsley and serve with a dollop of sour cream if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. For a lighter version, substitute with low-fat cheese or Greek yogurt.
