Description

A cozy and delicious Chicken Tortellini Soup packed with wholesome ingredients, perfect for a family meal.


Ingredients

  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon mustard powder
  • ¼ teaspoon ground sage
  • ¼ teaspoon pepper
  • 1 1/4 lb. bone-in chicken breast
  • Salt/Pepper (to taste)
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 yellow onion, diced
  • ¾ cup diced carrots
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 10 oz. refrigerated tortellini (about 2 cups)

Instructions

  1. In a large pot, heat the olive oil and butter over medium-high heat. Season the chicken breast with salt, pepper, and Italian seasoning. Sear for 4-5 minutes on each side until golden brown. Remove and set aside.
  2. In the same pot, add the diced onions, carrots, celery, and garlic. Sauté until tender, about 5 minutes.
  3. Pour in chicken broth, Worcestershire sauce, and hot sauce. Bring to a boil, then reduce heat and return the chicken to the pot.
  4. Cover and simmer for 20 minutes or until chicken is fully cooked. Remove, shred the chicken, and return to the pot.
  5. Add tortellini and cook according to package instructions, about 5-7 minutes, until tender.
  6. Taste and adjust seasonings as needed. Serve hot and enjoy!

Notes

For a creamier soup, stir in a splash of heavy cream just before serving. This soup can be stored in the fridge for up to 3 days or frozen for 3 months.
