Description

A warm bowl of Coconut Chicken & Rice that offers a delightful tropical twist, perfect for family gatherings or cozy evenings at home.


Ingredients

  • 2 chicken breasts
  • 1 cup coconut milk
  • 1 cup rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pan, heat olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Stir in the garlic and ginger, cooking for an additional minute.
  3. Add the chicken breasts and cook until browned on both sides, about 5–7 minutes.
  4. Pour in the coconut milk, season with salt and pepper, and bring to a gentle simmer. Continue cooking until the chicken is fully cooked, about 10–15 minutes more.
  5. In another pot, cook the rice according to package instructions while the chicken simmers.
  6. Serve the chicken over rice and garnish with fresh cilantro.

Notes

For extra creaminess, blend coconut milk with some of the cooked chicken juice before serving. Add red pepper flakes for a spicy kick or include veggies like bell peppers for added nutrition.
