Description

A comforting meatball soup filled with savory broth, flavorful meatballs, and pasta, perfect for any meal.


Ingredients

  • 1 Tablespoon olive oil
  • 1 egg (beaten)
  • ½ cup heavy cream (can substitute milk)
  • ½ cup Italian breadcrumbs
  • ¼ cup Parmesan cheese (finely grated)
  • 3 cloves garlic (finely diced)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ lb. ground beef (80% lean)
  • ½ lb. ground pork
  • 1 tablespoon butter
  • 1 yellow onion (diced)
  • ½ cup bell peppers (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 3 cups chicken broth
  • 1 ½ cups beef broth (can substitute chicken broth)
  • 2 (14.5 oz.) cans diced tomatoes, undrained
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon Worcestershire sauce
  • ½ cup heavy cream
  • 2 cups spinach
  • 1 cup dry pasta (cavatappi)
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • 1 pinch red pepper flakes
  • Salt/Pepper (to taste)
  • 8 oz. Ricotta cheese
  • ½ cup Parmesan cheese
  • Red pepper flakes (for garnish)

Instructions

  1. In a bowl, mix the ground beef, ground pork, beaten egg, heavy cream, breadcrumbs, grated Parmesan cheese, diced garlic, salt, and pepper until well combined. Form the mixture into small meatballs, about 1 inch in size. Place them on a baking sheet.
  2. Heat olive oil and butter in a large pot over medium heat. Add diced onions and bell peppers. Cook until softened, about 5 minutes.
  3. Stir in minced garlic and tomato paste. Cook for 1-2 minutes.
  4. Add chicken broth, beef broth, diced tomatoes, hot sauce, and Worcestershire sauce. Bring to a boil.
  5. Carefully add the meatballs to the pot. Reduce heat and simmer for about 20 minutes, until the meatballs are cooked through.
  6. Stir in heavy cream, spinach, and dry pasta. Cook for an additional 10 minutes, or until the pasta is tender.
  7. Add oregano, basil, parsley, mustard powder, and red pepper flakes. Adjust salt and pepper to taste.

Notes

Serve hot, garnished with Parmesan cheese and a sprinkle of red pepper flakes. Pairs well with crusty bread or a salad.
