- 4 tablespoons butter, divided
- 0.5 pound ground beef
- 0.75 cup chopped onion
- 0.75 cup shredded carrots
- 0.75 cup chopped celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 cups cubed potatoes
- 3 cups chicken broth
- 0.25 cup all-purpose flour
- 1.5 cups milk
- 2 cups cubed cheddar cheese
- 0.25 cup sour cream
- Sliced green onions for garnish
Instructions
- In a large pot over medium heat, melt 1 tablespoon of butter. Add the ground beef, onion, carrots, and celery. Cook and stir until the beef is browned and crumbly, about 5 to 7 minutes.
- Stir in the dried basil and parsley. Add the cubed potatoes and chicken broth, bringing the mixture to a boil. Once boiling, reduce the heat to low and let it simmer until the potatoes are tender, about 10 to 12 minutes.
- In a small saucepan, melt the remaining 3 tablespoons of butter over medium heat. Add flour and whisk until smooth, about 1 minute. Gradually whisk in milk, then simmer and stir until the sauce thickens and is smooth.
- Stir this sauce into the soup, stirring constantly. Bring it to a boil again, then reduce the heat to low and gently stir in the cheddar cheese until melted. Finally, add the sour cream and stir until just heated through.
- Serve hot, garnished with sliced green onions.
Notes
For a spicier kick, add diced jalapeños or hot sauce. Store leftovers in an airtight container for up to three days.
