Description

A comforting and hearty soup that combines the flavors of a classic cheeseburger in a warm, flavorful bowl.


Ingredients

  • 4 tablespoons butter, divided
  • 0.5 pound ground beef
  • 0.75 cup chopped onion
  • 0.75 cup shredded carrots
  • 0.75 cup chopped celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 cups cubed potatoes
  • 3 cups chicken broth
  • 0.25 cup all-purpose flour
  • 1.5 cups milk
  • 2 cups cubed cheddar cheese
  • 0.25 cup sour cream
  • Sliced green onions for garnish

Instructions

  1. In a large pot over medium heat, melt 1 tablespoon of butter. Add the ground beef, onion, carrots, and celery. Cook and stir until the beef is browned and crumbly, about 5 to 7 minutes.
  2. Stir in the dried basil and parsley. Add the cubed potatoes and chicken broth, bringing the mixture to a boil. Once boiling, reduce the heat to low and let it simmer until the potatoes are tender, about 10 to 12 minutes.
  3. In a small saucepan, melt the remaining 3 tablespoons of butter over medium heat. Add flour and whisk until smooth, about 1 minute. Gradually whisk in milk, then simmer and stir until the sauce thickens and is smooth.
  4. Stir this sauce into the soup, stirring constantly. Bring it to a boil again, then reduce the heat to low and gently stir in the cheddar cheese until melted. Finally, add the sour cream and stir until just heated through.
  5. Serve hot, garnished with sliced green onions.

Notes

For a spicier kick, add diced jalapeños or hot sauce. Store leftovers in an airtight container for up to three days.
