Description

Hearty and comforting soup that captures the savory flavors of classic stuffed peppers, made effortlessly in a slow cooker.


Ingredients

Scale
  • 1 pound ground beef (browned and drained)
  • 1/2 onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 can diced tomatoes (14 oz)
  • 1 can tomato sauce (14 oz)
  • 1 tsp oregano
  • 1 tsp garlic salt
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp pepper
  • 3 cups beef broth
  • 2 cups white rice (cooked)

Instructions

  1. In your crockpot, place all ingredients except the cooked rice.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. When ready to serve, spoon the soup into bowls and top with a generous spoonful of cooked rice.

Notes

For added flavor, serve with warm crusty bread or a side salad. Fresh parsley makes a lovely garnish.
