Description

A quick and healthy dish featuring fresh zucchini noodles, succulent shrimp, and the comforting flavors of garlic and Parmesan.


Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 3 medium zucchini (spiralized)
  • Salt and pepper (to taste)
  • 1 pound fresh or frozen shrimp (peeled and deveined)
  • ¼ cup grated Parmesan cheese

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute.
  2. Toss in the spiralized zucchini noodles and cook for 2-3 minutes until slightly softened. Season with salt and pepper, then remove the zoodles to a plate.
  3. In the same skillet, add the shrimp and cook for 3-4 minutes on each side until pink and heated through.
  4. Add the zucchini noodles back to the skillet with the Parmesan cheese, gently toss to combine, and remove from heat.
  5. Serve immediately and enjoy!

Notes

For added flavor, top with fresh herbs like basil or parsley.
