Ingredients

- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- 3 medium zucchini (spiralized)
- Salt and pepper (to taste)
- 1 pound fresh or frozen shrimp (peeled and deveined)
- ¼ cup grated Parmesan cheese
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute.
- Toss in the spiralized zucchini noodles and cook for 2-3 minutes until slightly softened. Season with salt and pepper, then remove the zoodles to a plate.
- In the same skillet, add the shrimp and cook for 3-4 minutes on each side until pink and heated through.
- Add the zucchini noodles back to the skillet with the Parmesan cheese, gently toss to combine, and remove from heat.
- Serve immediately and enjoy!

For added flavor, top with fresh herbs like basil or parsley.
