A cozy and creamy potato soup loaded with garlic and cheddar, perfect for chilly evenings.
Ingredients

- 4–5 medium organic russet potatoes, peeled and cubed
- 1 Tbsp extra virgin olive oil
- 1 Tbsp unsalted butter
- ½ red onion, chopped
- 6 garlic cloves, minced
- 2 tsps On Everything All-Purpose Blend
- 1 tsp smoked paprika
- 2 Tbsps white cooking wine (or extra veggie stock)
- 4 cups organic vegetable stock or broth
- 1 cup organic heavy cream
- 1–2 cups freshly grated sharp cheddar
- 1 cup kale, chopped (optional)
Instructions
- In a large pot, heat olive oil and butter over medium heat.
- Add chopped onion and garlic; cook until soft and fragrant (about 5 minutes).
- Stir in On Everything All-Purpose Blend and smoked paprika; let bloom for a minute.
- Toss in cubed potatoes and stir; deglaze with white cooking wine or additional broth.
- Pour in vegetable stock, bring to a simmer, and cook until potatoes are fork-tender (approximately 15 minutes).
- Use a potato masher for a rustic texture or blend part for a creamier base.
- Reduce heat to low and stir in heavy cream and cheddar cheese until melted.
- Add chopped kale (if using) and cook for another few minutes until wilted.
Notes
Use fresh, organic ingredients for best flavor. Swap heavy cream for half-and-half or cashew cream if desired.
