- 1 cup orzo pasta
- 1 pound boneless, skinless chicken breasts
- 1 cup asparagus, chopped
- 2 cups chicken broth
- 1 cup shredded cheese (like mozzarella or parmesan)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken breasts with salt and pepper, then add to the pot. Cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same pot, add chopped asparagus and sauté for 2-3 minutes.
- Add the orzo and chicken broth, bringing to a boil.
- Reduce heat and simmer until the orzo is cooked, about 8-10 minutes.
- Stir in the cooked chicken and shredded cheese. Mix until cheese is melted and everything is well combined.
- Serve warm.
Notes
Garnish with fresh herbs or extra cheese. Store leftovers in an airtight container for up to 3 days.
