Description

A hearty creamy beef pasta dish packed with protein, perfect for quick weeknight dinners.


Ingredients

  • 8 oz penne pasta
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil (for cooking)

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent.
  3. Toss in the ground beef, cooking until browned and cooked through.
  4. Stir in the diced tomatoes, beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Simmer for a few minutes.
  5. Add the cooked pasta to the skillet and toss until well coated in the creamy sauce.
  6. Spoon the creamy beef pasta onto plates and garnish with freshly chopped basil or parsley.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. This dish can be frozen for up to three months.
