Description

A cozy, one-pot lasagna soup packed with hearty beef, Italian sausage, and creamy cheeses, perfect for chilly nights.


Ingredients

Scale
  • ½ lb lean ground beef
  • ½ lb ground Italian sausage
  • Salt & freshly ground black pepper, to taste
  • 1 yellow onion, chopped
  • 1 Tbsp olive oil
  • 3 cloves garlic, minced
  • 2 Tbsp tomato paste
  • 1 recipe homemade marinara (or 24 oz jar)
  • ¼ tsp red pepper flakes
  • 2 Tbsp fresh parsley, chopped (or 2 tsp dried)
  • ½ tsp dried oregano
  • 1 tsp dried basil
  • 7 cups low-sodium chicken broth (or veggie broth)
  • 9 lasagna noodles, broken into pieces
  • 2 cups fresh spinach (optional)
  • 10 oz ricotta cheese (or cottage cheese)
  • 1 cup shredded mozzarella
  • ½ cup freshly grated parmesan
  • Fresh basil, for garnish

Instructions

  1. In a large pot over medium-high heat, cook the ground beef and sausage together. Season with salt and pepper. Once browned, drain the grease and set the meat aside.
  2. In the same pot, heat olive oil over medium. Add the chopped onion and sauté for about 5 minutes. Add minced garlic and cook for another minute.
  3. Stir in tomato paste, marinara sauce, red pepper flakes, parsley, oregano, basil, and chicken broth. Add the browned meat back to the pot.
  4. Bring to a boil, then reduce to medium-low. Add broken lasagna noodles and simmer for 10–12 minutes, stirring occasionally until noodles are tender. Stir in spinach if using.
  5. In a small bowl, mix together the ricotta, mozzarella, and parmesan.
  6. Ladle the hot soup into bowls and dollop a scoop of the cheese mixture on top. Garnish with fresh basil and serve warm.

Notes

Break the noodles by hand for a rustic feel and ensure to add spinach just before serving for vibrant color.
