- 0.25 cup butter
- 3 ribs celery, sliced
- 3 carrots, thinly sliced
- 1 large onion, chopped
- 3 cups chopped cooked turkey
- 2 cups leftover stuffing
- 2 large tomatoes, peeled and chopped
- 3 sprigs fresh parsley, minced
- 6 cups turkey stock
- 1.5 cups egg noodles
Instructions
- Melt the butter in a stockpot over low heat. Add the celery, carrots, and onion; cook and stir until they’re tender, about 8 to 10 minutes.
- Stir in the turkey, stuffing, tomatoes, and parsley. Pour in the turkey stock and bring the soup to a boil. Once boiling, reduce the heat and let it simmer, partially covered, for about an hour until all the flavors meld together.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook the egg noodles in the boiling water, stirring occasionally, until they are tender but firm, about 7 to 9 minutes. Drain the noodles.
- Scoop the hot noodles into deep serving bowls; ladle the soup on top.
Notes
For a thicker soup, let it simmer longer or mash some of the vegetables. Substitute egg noodles with rice or grain of your choice for a different texture.
