Ingredients

- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado
- ½ cup of Frozen or Canned Corn, thawed or drained
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- In a bowl, mash the avocado and mix in the lime juice until smooth and creamy.
- Add the black beans, corn, red onion, and fresh cilantro, folding them together gently to combine.
- Sprinkle in the cumin, chili powder, salt, and black pepper, mixing until just incorporated.
- Warm the tortillas in a skillet for about a minute on each side until they are pliable and slightly golden.
- Spoon the filling onto the center of each tortilla, folding it over tightly to seal the burrito.
- Serve immediately and enjoy!
Notes
For extra creaminess, add vegan sour cream or vegan cheese. For a spicy kick, include diced jalapeños or hot sauce.
