Description

Quick and flavorful vegan burrito wraps that are perfect for busy weeknights.


Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn, thawed or drained
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. In a bowl, mash the avocado and mix in the lime juice until smooth and creamy.
  2. Add the black beans, corn, red onion, and fresh cilantro, folding them together gently to combine.
  3. Sprinkle in the cumin, chili powder, salt, and black pepper, mixing until just incorporated.
  4. Warm the tortillas in a skillet for about a minute on each side until they are pliable and slightly golden.
  5. Spoon the filling onto the center of each tortilla, folding it over tightly to seal the burrito.
  6. Serve immediately and enjoy!

Notes

For extra creaminess, add vegan sour cream or vegan cheese. For a spicy kick, include diced jalapeños or hot sauce.
