- 2 cups Kodiak Pancake Mix (high protein)
- 1 cup Liquid egg whites
- 3/4 cup Greek yogurt (non-fat or low-fat)
- 1/3 cup Milk
- 1.5 cups Frozen berries
- Maple syrup
- Fresh berries
Instructions
- Preheat the oven to 350°F (175°C). Lightly spray 4 x 2-cup glass bowls with cooking spray and place them on a large baking sheet.
- In a large bowl, combine the pancake mix, egg whites, Greek yogurt, and milk. Whisk until smooth.
- Fold in the frozen berries gently.
- Pour the batter into 4 equal bowls and transfer them to the oven. Bake for 30-35 minutes, or until the tops are golden brown.
- Top with fresh berries and maple syrup to serve, or store in the fridge for meal prep.
Notes
