Description

A hearty winter soup that combines Italian sausage, potatoes, and kale in a creamy broth, providing warmth and nourishment.


Ingredients

Scale
  • 1 pound (450 grams) Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups (about 1 liter) chicken broth
  • 34 medium potatoes, peeled and diced
  • 4 cups kale, washed and chopped (stems removed)
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried thyme or Italian seasoning (optional)
  • Grated Parmesan cheese for serving (optional)
  • Crusty bread for serving (optional)

Instructions

  1. Prepare the sausage by removing the casing and crumbling it into pieces.
  2. In a large pot, heat olive oil over medium heat and add the sausage, cooking until browned (5-7 minutes).
  3. Drain excess fat if necessary, leaving about a tablespoon in the pot.
  4. Add chopped onion and sauté until translucent (about 5 minutes).
  5. Add minced garlic, cooking for an additional minute until fragrant.
  6. Add optional red pepper flakes and thyme or Italian seasoning, and stir.
  7. Pour in chicken broth, scraping any browned bits from the bottom.
  8. Add diced potatoes, bring to a boil, then reduce to a simmer and cook until tender (15-20 minutes).
  9. Stir in chopped kale and cook until wilted (about 5 minutes).
  10. Slowly add cream, stirring to combine, and heat through without boiling.
  11. Season with salt and pepper to taste, then serve with optional Parmesan cheese and crusty bread.

Notes

Store any leftover soup in an airtight container in the fridge for 3-4 days or freeze in portions for longer storage.
