- 1 pound (450 grams) Italian sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 4 cups (about 1 liter) chicken broth
- 3–4 medium potatoes, peeled and diced
- 4 cups kale, washed and chopped (stems removed)
- 1 cup heavy cream or half-and-half
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon dried thyme or Italian seasoning (optional)
- Grated Parmesan cheese for serving (optional)
- Crusty bread for serving (optional)
Instructions
- Prepare the sausage by removing the casing and crumbling it into pieces.
- In a large pot, heat olive oil over medium heat and add the sausage, cooking until browned (5-7 minutes).
- Drain excess fat if necessary, leaving about a tablespoon in the pot.
- Add chopped onion and sauté until translucent (about 5 minutes).
- Add minced garlic, cooking for an additional minute until fragrant.
- Add optional red pepper flakes and thyme or Italian seasoning, and stir.
- Pour in chicken broth, scraping any browned bits from the bottom.
- Add diced potatoes, bring to a boil, then reduce to a simmer and cook until tender (15-20 minutes).
- Stir in chopped kale and cook until wilted (about 5 minutes).
- Slowly add cream, stirring to combine, and heat through without boiling.
- Season with salt and pepper to taste, then serve with optional Parmesan cheese and crusty bread.
Notes
Store any leftover soup in an airtight container in the fridge for 3-4 days or freeze in portions for longer storage.
