Description

A comforting bowl of split pea soup enriched with garlic, turmeric, and chorizo, perfect for family gatherings or quiet weeknight dinners.


Ingredients

  • 2 tablespoons coconut oil
  • 2 cups minced onions
  • 5 cloves minced garlic
  • 1 cup diced carrots
  • 2 cups split peas
  • 3 celery sticks, chopped
  • 200 grams diced potatoes
  • 300 grams chorizo sausages (or any meat you prefer)
  • 2.5 liters water
  • 2 cups cashew milk (or any milk of your choice)
  • 3 stock cubes
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon turmeric
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • ½ teaspoon smoked paprika
  • 1 dried lemongrass stalk

Instructions

  1. Prep the ingredients by chopping the vegetables and lightly rinsing the split peas.
  2. Heat the coconut oil in a large pot over medium heat.
  3. Sauté the onions for 2 minutes until they start to soften.
  4. Add the diced potatoes, carrots, and celery; sauté for a further 3 minutes.
  5. Pour in the water, add the stock cubes, and dried lemongrass.
  6. Add the split peas and stir well.
  7. Cook for 60 minutes, stirring occasionally.
  8. Add the cut chorizo sausages, cashew milk, and seasonings.
  9. Cook for a further 20 minutes, stirring occasionally.

Notes

For a creamier soup, blend a portion of it with an immersion blender. Garnish with fresh parsley or a drizzle of olive oil before serving.
