Ingredients

  • 1 (2-pound) whole salmon fillet (skin-on preferred)
  • 3 tablespoons melted butter (or olive oil)
  • 2 cloves garlic (minced)
  • 1 tablespoon brown sugar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon ground paprika
  • 1 teaspoon garlic powder
  • ¾ teaspoon salt
  • Ground black pepper (to taste)

Instructions

  1. Preheat your oven to 375°F. Lay a large piece of foil on a rimmed baking sheet and place the salmon fillet skin side down, pink side up.
  2. Crimp the edges of the foil around the salmon to create a ‘boat’ to hold in the juices.
  3. In a bowl, mix the melted butter and minced garlic. Spread half of it over the salmon.
  4. In another bowl, combine brown sugar, Italian seasoning, paprika, garlic powder, salt, and black pepper. Sprinkle the mixture over the salmon and drizzle the remaining garlic butter on top.
  5. Bake the salmon for 15-22 minutes, basting with its own juices halfway through.
  6. After baking, let the salmon rest for about 5 minutes before serving.

Notes

For extra crispiness, broil the salmon for the last couple of minutes. A squeeze of fresh lemon juice enhances the flavors.
