Description

Ingredients

  • 24 salmon filets (68 ounces), skin removed
  • 1 head cauliflower, sliced top down into ‘steaks’
  • 23 tablespoons olive oil
  • 23 tablespoons harissa paste
  • Salt, to taste
  • Butter or oil for searing
  • Fresh minced basil, for garnish
  • Lemon or lime wedges, for serving
  • 1 ripe avocado, seeded and peeled
  • 34 fresh basil leaves
  • 12 garlic cloves
  • 1/2 lemon, juice squeezed
  • 1/4 cup olive oil
  • 1/3 cup light cream, or half and half

Instructions

  1. Preheat the oven to 425°F.
  2. Slice the cauliflower into 3/4 inch thick slices and drizzle with olive oil. Season with salt.
  3. Mix harissa paste with olive oil in a small bowl and coat the cauliflower with the mixture.
  4. Bake the cauliflower for 35 minutes, flipping after 20 minutes.
  5. Blend avocado, basil, garlic, lemon juice, olive oil, and cream in a blender until smooth.
  6. Season the salmon with salt. Heat butter or oil in a skillet over medium-high heat.
  7. Sear the salmon for 3-4 minutes per side for medium-rare or 4-5 minutes for medium.
  8. Plate salmon on roasted cauliflower and top with avocado sauce. Garnish with basil and serve with lemon or lime wedges.

This dish is quick to prepare, making it ideal for busy weeknights. Adjust the harissa for desired spice level and feel free to add other herbs for additional flavor.
