Description

A quick and delicious low carb take on the classic Chicken Parmesan, featuring crispy chicken, rich marinara, and melted cheese, all ready in just 20 minutes.


Ingredients

  • 8 boneless skinless chicken breast cutlets (3 ounces each)
  • 2 teaspoons Italian herb blend
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon salted butter
  • 1/2 cup grated parmesan cheese
  • 1 1/2 cups homemade marinara or store-bought
  • 1 cup shredded mozzarella cheese
  • 6 to 8 leaves of fresh basil, thinly sliced

Instructions

  1. Preheat your oven to 450°F.
  2. Season the chicken on both sides with the Italian herb blend, garlic powder, kosher salt, and black pepper.
  3. Heat a large sauté pan over medium heat, add olive oil and salted butter, and cook the chicken in batches for 2 to 3 minutes per side until golden brown and cooked through.
  4. Place the chicken on a rimmed baking sheet, sprinkle with parmesan cheese, top with marinara sauce, and finish with mozzarella cheese.
  5. Bake for 6 to 8 minutes or until the cheese is melted and bubbly. Optionally, switch to broil for the last minute for a crispier finish.
  6. Remove from oven and sprinkle with more parmesan cheese and fresh basil. Serve hot.

Notes

For a crunchier texture, dredge the chicken in almond flour before searing. Make your own marinara sauce to control sweetness.
