Description
A quick and nutritious garlic herb foil baked salmon that’s juicy and flavorful, perfect for family-friendly dinners.
Ingredients

- 2 lb/1 kg boneless side of Salmon, fresh, skin-on
- 4 tbsp Unsalted Butter, softened
- 3 large cloves of Garlic, finely diced
- 1 tbsp Fresh Chives, finely diced
- 1 tbsp Fresh Dill, finely diced
- 1 tbsp Fresh Parsley, finely diced
- 3/4 tsp Salt, or to taste
- 1/4 tsp Black Pepper, or to taste
- Lemon Wedges, to serve
Instructions
- Bring salmon to room temperature (about 10 minutes) and preheat oven to 190C/375F.
- In a small mixing bowl, combine butter, garlic, chives, parsley, dill, salt, and pepper. Set aside.
- Place two large sheets of foil in a cross on a baking tray and place the salmon skin side down in the center.
- Spread the butter mixture evenly over the top of the salmon.
- Fold the foil in to create a tent over the salmon, avoiding contact with the fish.
- Bake in the oven for 15-20 minutes or until the thickest part is almost cooked through.
- Remove from oven, crumple the foil around the salmon, and broil until the garlic lightly browns (about 5 minutes).
- Serve immediately with lemon wedges and any leftover butter from the foil.
Notes
For best results, use high-quality salmon and ensure the foil is sealed tightly to retain moisture.
