Description

A quick and nutritious sheet pan salmon recipe featuring flaky salmon, baby potatoes, and crisp green beans, perfect for weeknight dinners.


Ingredients

  • 4 (6-ounce) salmon fillets
  • 1 pound baby yellow potatoes
  • 1/2 pound green beans
  • 1/4 cup lemon juice
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon chopped parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Boil the potatoes in a pot of water until fork tender, about 15 minutes.
  4. In a small bowl, combine lemon juice, Parmesan cheese, olive oil, garlic, and parsley; whisk well.
  5. Place the salmon, potatoes, and green beans on the baking sheet and season with salt and pepper.
  6. Brush the sauce over the salmon and vegetables.
  7. Bake until the salmon flakes easily with a fork, about 15 minutes, adding 2 minutes of broiling if desired for crispness.
