Description

- 4 cups low-sodium chicken broth
- 1/2 cup basil pesto (store-bought or homemade)
- 2 cups cooked chicken, shredded or diced
- 1 cup small pasta (ditalini, orzo, or small shells)
- 2 cups fresh baby spinach
Instructions
- 1. Heat chicken broth in a large pot over medium-high heat until simmering.
- 2. Whisk pesto into the simmering broth until completely incorporated.
- 3. Add pasta and cook according to package directions, about 8-10 minutes.
- 4. Add cooked chicken and simmer 2-3 minutes to heat through.
- 5. Remove from heat and stir in fresh spinach until wilted.
- 6. Season with salt and pepper to taste and serve immediately.
Notes
Store leftovers up to 4 days in refrigerator. Add extra broth when reheating as pasta absorbs liquid. Can be frozen up to 3 months.
