Description

Ingredients

  • 4 cups low-sodium chicken broth
  • 1/2 cup basil pesto (store-bought or homemade)
  • 2 cups cooked chicken, shredded or diced
  • 1 cup small pasta (ditalini, orzo, or small shells)
  • 2 cups fresh baby spinach

Instructions

  1. 1. Heat chicken broth in a large pot over medium-high heat until simmering.
  2. 2. Whisk pesto into the simmering broth until completely incorporated.
  3. 3. Add pasta and cook according to package directions, about 8-10 minutes.
  4. 4. Add cooked chicken and simmer 2-3 minutes to heat through.
  5. 5. Remove from heat and stir in fresh spinach until wilted.
  6. 6. Season with salt and pepper to taste and serve immediately.

Notes

Store leftovers up to 4 days in refrigerator. Add extra broth when reheating as pasta absorbs liquid. Can be frozen up to 3 months.
