Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon fresh ginger, grated
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon turmeric
- 1 teaspoon black pepper
- 2 cups kale, chopped
- Salt to taste
- Lemon juice for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Stir in carrots, celery, and ginger, cooking for another 5 minutes.
- Pour in chicken broth and bring to a simmer.
- Add cooked chicken, turmeric, black pepper, and salt.
- Stir in kale and cook until wilted.
- Adjust seasoning to taste and serve with lemon juice.
