Description

A nourishing stovetop chicken soup with ginger and turmeric, finished with tender kale and shredded chicken for a wholesome, warming meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon fresh ginger, grated
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 2 cups kale, chopped
  • Salt to taste
  • Lemon juice for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in carrots, celery, and ginger, cooking for another 5 minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. Add cooked chicken, turmeric, black pepper, and salt.
  6. Stir in kale and cook until wilted.
  7. Adjust seasoning to taste and serve with lemon juice.

Serve with a lemon wedge and crusty whole-grain bread for a complete meal.
