Description

A soothing, stove-top chicken soup simmered with turmeric, garlic, and fresh vegetables, perfect for busy weeknights or sick days.

Ingredients

Scale
  • 1 lb boneless skinless chicken breast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon ground turmeric
  • 6 cups chicken broth
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • 1 lemon, juiced (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery, and sauté until softened.
  3. Incorporate garlic and ginger, and cook for another minute.
  4. Stir in the turmeric, and cook for 30 seconds until fragrant.
  5. Add the chicken broth and bring to a simmer.
  6. Place the chicken breast in the pot and cook until fully cooked, about 15-20 minutes.
  7. Remove the chicken, shred it, and return it to the pot.
  8. Stir in the kale or spinach, and cook until wilted.
  9. Season with salt, pepper, and lemon juice if desired.

Notes

For best results, shred the chicken while warm and add lemon gradually to brighten the flavors.
