Description
A delicious blend of creamy brie, crisp apples, and spicy-sweet hot honey, all nestled between perfectly toasted bread.

- 8 slices Hearty white country loaf or French bread
- 2 Organic apples, thinly sliced
- 250 g Brie, cut into 12–16 equally thin slices
- 3 tbsp Butter for spreading
- 4 tbsp Hot honey butter (mix of 2 tbsp salted butter and 2 tbsp Fireweed honey with chili flakes)
- 2 tbsp Salted butter, at room temperature
- 2 tbsp Fireweed honey, or other mild honey
- 1/4 tsp Hot chili flakes
Instructions
- Mix 2 tbsp salted butter and 2 tbsp Fireweed honey in a bowl, stir in 1/4 tsp hot chili flakes, and adjust heat level if desired.
- Core and thinly slice apples, arrange brie slices overlapping slightly on the bread.
- Spread 3 tbsp butter thinly on the outer sides of each bread slice.
- On four slices, spread 1 tbsp hot honey butter, layer brie slices, apple slices, and extra chili flakes if desired.
- Top with remaining bread slices, buttered side out, and press gently.
- Heat a skillet over medium-low, place sandwiches in and cook 3 to 4 minutes per side until golden.
- If needed, cover the skillet for 1 minute or bake at 350 F for 3 minutes for even melting.
- Transfer to a cutting board, rest for 1 minute, then slice diagonally for clean edges.
Notes
Use room-temperature butter for easier spreading and choose crisp, slightly tart apples for best flavor contrast.
