Description

Deliciously soft muffins bursting with cinnamon and apple flavors, packed with protein from Greek yogurt.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 1/2 cup apple sauce
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk Greek yogurt, sugar, apple sauce, and egg.
  4. Combine wet and dry ingredients without overmixing.
  5. Fold in diced apples gently.
  6. Pour batter into muffin tins.
  7. Bake for 20-25 minutes until golden.
  8. Cool before serving.
