Instructions

- Combine wet ingredients into the dry mix until just combined, ensuring not to overmix.
- Gently fold in the chopped apples.
- Heat a non-stick skillet over medium heat and grease it lightly.
- Pour about 1/4 cup of batter onto the skillet for each pancake and wait until bubbles form on the surface.
- Flip the pancakes when edges are set and golden brown on both sides.
- Serve warm with maple syrup or powdered sugar as desired.
