Description

Crispy oven-baked taquitos filled with seasoned black beans, corn, and peppers, perfect for a quick weeknight meal.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Cooking spray

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sauté onion and garlic in a skillet until translucent.
  3. Add black beans, corn, bell pepper, lime juice, cumin, chili powder, salt, and pepper; cook for 5 minutes.
  4. Place a few tablespoons of the mixture onto each tortilla, roll up tightly, and place seam-side down on a baking sheet.
  5. Spray the taquitos with cooking spray.
  6. Bake for 15-20 minutes or until golden brown.
  7. Serve warm with salsa or guacamole.

Notes

For extra crispiness, warm the tortillas before filling them. Store leftovers in an airtight container.
