Ingredients

  • 5 tablespoons butter, divided
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 3 cups chicken broth
  • 8 cups broccoli florets
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • Ground black pepper to taste

Instructions

  1. Gather all your ingredients.
  2. In a medium stock pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and celery, sautéing until they turn tender and fragrant.
  3. Add in the broccoli florets along with the chicken broth. Cover the pot and let it simmer for about 10 minutes.
  4. Carefully pour the soup into a blender, filling it no more than halfway. Blend until smooth, then pour it back into a clean pot.
  5. In a small saucepan, melt the remaining 3 tablespoons of butter over medium heat. Stir in the flour, then gradually add the milk until the mixture thickens and bubbles.
  6. Combine this thickened mixture with your blended soup, seasoning with black pepper to taste.
  7. Serve the soup hot, optionally with warm bread or cheese on top.

Notes

For a deeper flavor, consider adding garlic or nutmeg. For a vegan version, substitute with olive oil, vegetable broth, and plant-based milk.
