- 5 tablespoons butter, divided
- 1 onion, chopped
- 1 stalk celery, chopped
- 3 cups chicken broth
- 8 cups broccoli florets
- 3 tablespoons all-purpose flour
- 2 cups milk
- Ground black pepper to taste
Instructions
- Gather all your ingredients.
- In a medium stock pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and celery, sautéing until they turn tender and fragrant.
- Add in the broccoli florets along with the chicken broth. Cover the pot and let it simmer for about 10 minutes.
- Carefully pour the soup into a blender, filling it no more than halfway. Blend until smooth, then pour it back into a clean pot.
- In a small saucepan, melt the remaining 3 tablespoons of butter over medium heat. Stir in the flour, then gradually add the milk until the mixture thickens and bubbles.
- Combine this thickened mixture with your blended soup, seasoning with black pepper to taste.
- Serve the soup hot, optionally with warm bread or cheese on top.
Notes
For a deeper flavor, consider adding garlic or nutmeg. For a vegan version, substitute with olive oil, vegetable broth, and plant-based milk.
