Instructions
- Chop onion, carrot, and celery finely; sweat in a hot pan with oil for 5-7 minutes.

- Add stock and canned tomatoes; bring to a simmer.
- Add beans, grains, or potatoes; simmer until tender (10-30 minutes).
- Stir in quick-cooking proteins and greens in the last 5 minutes.
- Adjust seasoning with salt, acid, or a splash of cream as needed.
- Let soup sit off heat for 5 minutes before serving.
