Description

A creamy, velvety chocolate chia seed pudding that’s perfect for breakfast or a delightful evening treat.


Ingredients

Scale
  • 1/4 cup cacao powder or unsweetened cocoa powder
  • 35 Tbsp maple syrup
  • 1/2 tsp ground cinnamon (optional)
  • 1 pinch sea salt
  • 1/2 tsp vanilla extract
  • 1 1/2 cups Almond Breeze Almondmilk Original Unsweetened (or light coconut milk for creamier texture)
  • 1/2 cup chia seeds

Instructions

  1. In a small mixing bowl, add the cacao powder (sift first to reduce clumps), maple syrup, ground cinnamon, sea salt, and vanilla extract. Whisk until nicely blended.
  2. Slowly add a little of the almond milk while whisking continuously until a thick paste forms.
  3. Add the rest of the almond milk and whisk until smooth and blended.
  4. Stir in the chia seeds, whisking to combine.
  5. Cover the mixture and refrigerate overnight or for at least 3 to 5 hours.
  6. For best results, give it an extra stir or whisk after about 30-45 minutes in the fridge to prevent clumping.
  7. Enjoy chilled with your favorite toppings.

Notes

This pudding stores beautifully in the refrigerator for about 4-5 days.
