Description

Ingredients

  • 1 cup black beans (canned or cooked)
  • 1 cup rice (white or brown)
  • 1 pound sausage (smoked or andouille)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 2 cups chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. In a large pot, sauté the chopped onion, bell pepper, and minced garlic until soft.
  2. Add the sausage and cook until browned.
  3. Stir in the black beans, rice, cumin, paprika, and broth, and mix well.
  4. Bring to a boil, reduce heat, cover, and simmer for about 20 minutes until the rice is tender.
  5. Season with salt and pepper, stir, and serve hot garnished with fresh cilantro.

Notes

For added flavor, consider browning the sausage thoroughly and using a bay leaf while simmering. Leftovers can be refrigerated for up to 4 days or frozen for 3 months.
