- 2 teaspoons light brown sugar
- 1 teaspoon paprika (not smoked)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon ground ginger
- 1/2 teaspoon sea salt
- 1/8 teaspoon cayenne pepper
- 1 ½ pounds skin-on salmon filet
- 1 tablespoon extra-virgin olive oil
- 2 cups mango salsa
- 1 avocado, sliced
Instructions
- Preheat the oven to 400°F.
- Line a rimmed baking sheet with parchment paper or foil.
- In a small bowl, combine light brown sugar, paprika, garlic powder, onion powder, oregano, thyme, ground ginger, sea salt, and cayenne pepper. Stir well to combine.
- Place the salmon skin side down on the prepared baking sheet.
- Drizzle the olive oil over the top of the salmon and rub it in.
- Generously sprinkle the spice mixture over the salmon and massage it into the flesh.
- Bake for 12 to 15 minutes, until it flakes easily with a fork.
- Serve topped with mango salsa and sliced avocado.
Notes
For extra flair, sprinkle sesame seeds on the avocado before serving. A cast-iron skillet can be used for a delicious crust before baking.
