Description

Fluffy and delicious pancakes made with cottage cheese, perfect for a nutritious breakfast.


Ingredients

  • 3/4 cup rolled oats (gluten-free if needed)
  • 1 tsp baking powder
  • 1/4 tsp cinnamon (optional)
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup, plus more for serving
  • 1/4 cup milk (any kind)
  • 1/2 cup cottage cheese (whole milk or low-fat)
  • 3/4 cup all-purpose flour (or gluten-free version)

Instructions

  1. Blend the rolled oats until they resemble a fine flour.
  2. Add baking powder, cinnamon, eggs, vanilla extract, maple syrup, milk, and cottage cheese. Blend until smooth.
  3. Gradually mix in the flour, pulsing gently to combine.
  4. Heat a non-stick skillet over medium heat and add a bit of oil or butter.
  5. Pour about 1/4 cup of batter for each pancake and cook until bubbles form, about 2-3 minutes.
  6. Flip and cook for 1-2 minutes until golden brown. Repeat until the batter is gone.

Notes

For fluffier pancakes, let the batter sit for a few minutes before cooking. You can replace some all-purpose flour with almond flour for added flavor.
