Description

A rich and comforting bowl of broccoli cheddar soup that balances creamy goodness with wholesome nutrition.


Ingredients

Scale
  • 2 cups of broccoli florets
  • 1 cup of shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable or chicken broth
  • 1 cup of milk or cream
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Optional: cooked chicken for additional protein

Instructions

  1. In a large pot, heat the olive oil over medium heat. Toss in the chopped onion and minced garlic, sautéing until they’re soft and translucent.
  2. Add the broccoli florets to the pot and sauté for another 2-3 minutes.
  3. Pour in the broth and bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the broccoli is tender.
  4. Using an immersion blender, blend the soup until it’s smooth, or leave it a bit chunky if preferred.
  5. Stir in the milk or cream along with the shredded cheddar cheese until well combined and melted.
  6. Season with salt and pepper to taste.
  7. Serve hot, optionally with crusty bread on the side.

Notes

For a thicker soup, mash some of the broccoli after blending. Add a hint of nutmeg for elevated flavor.
