- 4 salmon fillets (about 6 ounces each)
- 1 teaspoon olive oil
- 1 tablespoon brown sugar
- 1 teaspoon lemon zest
- 1/2 teaspoon smoked paprika or chipotle powder
- 1/4 teaspoon fine sea salt
- Half of a lemon, quartered
- 3/4 pound green beans or quick cooking veggie
- 1 tablespoon olive oil (for beans)
- Salt and fresh ground black pepper (for beans)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a large rimmed baking sheet.
- In a small bowl, mix brown sugar, lemon zest, smoked paprika, and salt.
- Pat the salmon fillets dry and rub each fillet lightly with olive oil.
- Generously sprinkle the brown sugar mix over the salmon, massaging it in; marinate for 10-15 minutes if possible.
- Place the salmon fillets skin-side down on the baking sheet. Toss the green beans with the remaining olive oil, salt, and pepper, and scatter around the salmon.
- Bake for 12-15 minutes, or until the salmon reaches an internal temperature of 125°F and flakes easily.
- Serve with lemon wedges on the side for squeezing over the top.
Notes
For deeper flavor, allow the salmon to marinate for 15 minutes. Fresh herbs like dill or thyme can be added for a twist.
