- 6 slices bread (French baguette, rustic Italian loaf, sourdough, or ciabatta)
- 4–6 tomatoes (Roma or heirloom; or cherry tomatoes, cut into slices or small pieces)
- 8 ounces fresh mozzarella cheese (cut into slices or small pieces)
- 4 teaspoons extra virgin olive oil (more for garnish)
- 3 cloves garlic (whole)
- 8 basil leaves (cut into ribbons, more for garnish)
- ½ teaspoon sea salt
- ½ teaspoon freshly ground pepper
- 1 tablespoon balsamic vinegar (or balsamic glaze)
Instructions
- Slice the tomatoes and mozzarella evenly using a sharp knife or mandoline.
- In a large shallow bowl, combine olive oil, balsamic vinegar, salt, pepper, and basil. Add the tomatoes and toss to coat. Cover and let sit for 30-60 minutes.
- Preheat oven to 450°F. Toast the bread slices on a baking sheet, brushing with olive oil until edges are browned (about 5 minutes).
- Rub the toasted bread with fresh garlic for flavor.
- Assemble the bruschetta by layering marinated tomatoes and fresh mozzarella on the bread. Drizzle with olive oil and garnish with additional basil. Serve immediately.
