Description

Ingredients

  • 2 cups cherry tomatoes or grape tomatoes
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Olive oil for serving
  • Fresh herbs for serving (such as basil or parsley)
  • Crostini for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cherry tomatoes with olive oil, balsamic vinegar, minced garlic, dried basil, and oregano on a baking sheet.
  3. Season with salt and black pepper to taste.
  4. Bake for 20 minutes or until the tomatoes are soft and splitting open.
  5. Allow the mixture to cool slightly.
