Description

A warm, Cajun-spiced dish featuring tender salmon, fluffy orzo, and vibrant spinach that is ready in less than 30 minutes!


Ingredients

  • 4 salmon fillets (skinned)
  • 2 teaspoons Cajun or blackening seasoning
  • 6 tablespoons extra virgin olive oil (divided)
  • 2 tablespoons unsalted butter
  • 1 large onion (diced)
  • 6 cloves garlic (minced)
  • 1 1/2 pounds cherry tomatoes (halved)
  • 1 pound baby spinach
  • 3 cups low-sodium chicken stock (or water/vegetable stock)
  • 1 tablespoon dried oregano
  • 2 teaspoons fine sea salt
  • 1/2 teaspoon black pepper
  • 1 pound orzo pasta
  • 3 tablespoons lemon juice
  • 1/4 cup flat-leaf Italian parsley (minced)

Instructions

  1. Heat a large pot over medium heat with 4 tablespoons of olive oil and the butter.
  2. Pat the salmon pieces dry and season with Cajun spice on both sides.
  3. Sear the salmon for 3 minutes per side, then place on a plate and cover with foil.
  4. In the same pan, add remaining olive oil and onion with a pinch of salt; cook until translucent (about 5 minutes).
  5. Add the garlic and cook until fragrant (about 2 minutes).
  6. Add the tomatoes and cook for 5-6 minutes until they start to release their juices.
  7. Add the spinach, oregano, salt, and pepper, mixing well and covering with a lid for 2-3 minutes until the spinach wilts.
  8. Add the chicken stock and bring to a boil.
  9. Once boiling, add the orzo and stir; cover the pot, reduce heat to low, and cook for 8 minutes.
  10. After 8 minutes, uncover and nestle the salmon pieces into the orzo; cover again and cook for another 4-6 minutes.
  11. Remove from heat, mix in the lemon juice and parsley, adjusting salt and pepper to taste.

Notes

For optimal texture, consider sous vide cooking the salmon before adding it to the pot. Serve garnished with additional parsley and a wedge of lemon.
