Description
This dish features a bold combination of andouille sausage and cauliflower rice, ready in just about 30 minutes for a quick and hearty family meal.

- 2 tablespoons olive oil
- 6 ounces andouille chicken sausage (sliced)
- 1/2 cup onion (chopped)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 3 cloves garlic (minced)
- 4 cups riced cauliflower (fresh or frozen)
- 1 tablespoon Cajun seasoning
- 1/4 cup chicken (or vegetable) broth or stock
- 1/4 cup green onions (chopped)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the sliced andouille chicken sausage and cook until browned and cooked through, about 6 minutes.
- Toss in the chopped onion and bell peppers. Sauté for 3 to 4 minutes until they soften and become fragrant.
- Add the minced garlic and cook for an additional 30 seconds to enhance the flavor.
- Stir in the cauliflower rice along with the chicken broth and Cajun seasoning. Mix well and let it cook for about 5 to 6 minutes until the cauliflower is tender. Do not cover the pan.
- Once done, turn off the heat and gently mix in the green onions. Enjoy!
Notes
Feel free to adjust the heat by using more or less Cajun seasoning. Fresh cauliflower rice maintains texture better than frozen. Add greens like spinach or kale for extra nutrients.
