Description

A comforting casserole made with ground beef, potatoes, and gooey cheese, perfect for busy weeknights.

Ingredients

Scale
  • Nonstick cooking spray
  • 3 cups thinly sliced, peeled potatoes
  • 2 tablespoons butter, melted
  • 0.5 teaspoon salt
  • 1 pound ground beef
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1.5 cups shredded sharp Cheddar cheese, divided
  • 0.5 cup milk
  • Salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a 9×13-inch casserole dish with nonstick spray.
  2. In a large bowl, combine sliced potatoes with melted butter and 0.5 teaspoon of salt; mix until thoroughly coated. Arrange in overlapping slices in the casserole dish.
  3. Bake the potatoes for 20 to 30 minutes, until tender. Monitor to prevent sogginess.
  4. While baking, cook ground beef in a skillet over medium-high heat until browned and crumbly, about 5 to 7 minutes. Drain grease.
  5. In a large bowl, combine ground beef with cream of mushroom soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper; mix well.
  6. Spread the beef mixture over the baked potatoes. Bake until heated through, about 15 minutes.
  7. Top with remaining Cheddar cheese and bake until melted, about 4 to 5 more minutes.

Notes

For an extra crispy top, broil the casserole for a couple of minutes after baking. Consider adding minced garlic or onions for more flavor.
