- 3 cups thinly sliced, peeled potatoes
- 2 tablespoons butter, melted
- 0.5 teaspoon salt
- 1 pound ground beef
- 1 (10.5 ounce) can cream of mushroom soup
- 1.5 cups shredded sharp Cheddar cheese, divided
- 0.5 cup milk
- Salt and ground black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Spray a 9×13-inch casserole dish with nonstick spray.
- In a large bowl, combine sliced potatoes with melted butter and 0.5 teaspoon of salt; mix until thoroughly coated. Arrange in overlapping slices in the casserole dish.
- Bake the potatoes for 20 to 30 minutes, until tender. Monitor to prevent sogginess.
- While baking, cook ground beef in a skillet over medium-high heat until browned and crumbly, about 5 to 7 minutes. Drain grease.
- In a large bowl, combine ground beef with cream of mushroom soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper; mix well.
- Spread the beef mixture over the baked potatoes. Bake until heated through, about 15 minutes.
- Top with remaining Cheddar cheese and bake until melted, about 4 to 5 more minutes.
Notes
For an extra crispy top, broil the casserole for a couple of minutes after baking. Consider adding minced garlic or onions for more flavor.
