How to Make Chicken Broccoli Rice Casserole

Ingredients:

  • 2 Tablespoons butter
  • 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 1 teaspoon Italian seasoning
  • Salt/Pepper (to taste)
  • 2 1/2 cups chicken broth
  • 1 Tablespoon olive oil
  • 1 1/4 cups white long-grain rice (uncooked)
  • 2-3 cups fresh broccoli florets (uncooked)
  • 10.5 oz. Condensed Cream of Chicken Soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (separated)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1 cup Ritz crackers (crushed)
  • 2 Tablespoons melted butter

Directions:

  1. First things first , preheat your oven to 350°F.
  2. If using fresh chicken, cut it into bite-sized pieces and season with Italian seasoning, salt, and pepper. Melt the butter in a large pot over medium heat and cook the chicken for about 5 minutes until golden brown. If you’re using rotisserie chicken, this step is optional.
  3. Next, add the chicken broth, olive oil, and rice to the pot. Bring it to a boil, then reduce the heat and let it simmer, covered, for 6 minutes.
  4. Now it’s time to add the fresh broccoli on top of the rice, cover it again, and let it cook for 9 more minutes, or until the rice is fully cooked and has absorbed the liquid. If it’s not quite done, cover it back up and simmer for another 5 minutes.
  5. Remove the pot from the heat and let it sit, covered, for 10 minutes. This resting time allows any remaining rice at the bottom to release.
  6. Once rested, add in the cooked chicken, cream of chicken soup, milk, sour cream, and half of the cheddar cheese. Mix gently to combine.
  7. Pour the mixture into a lightly greased 9×13 casserole dish. Top it off with the remaining cheese.
  8. Cover and bake for 15 minutes.
  9. To add a lovely topping, mix crushed Ritz crackers with melted butter and sprinkle it over the casserole. Bake uncovered for an additional 10 minutes for a crisp finish.
