- 2 Tablespoons butter
- 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
- 1 teaspoon Italian seasoning
- Salt/Pepper (to taste)
- 2 1/2 cups chicken broth
- 1 Tablespoon olive oil
- 1 1/4 cups white long-grain rice (uncooked)
- 2–3 cups fresh broccoli florets (uncooked)
- 10.5 oz. Condensed Cream of Chicken Soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese (separated)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1 cup Ritz crackers (crushed)
- 2 Tablespoons melted butter
Instructions
- Preheat the oven to 350°F.
- If using fresh chicken, cut it into bite-sized pieces and season with Italian seasoning, salt, and pepper. Melt the butter in a large pot over medium heat and cook the chicken for about 5 minutes until golden brown.
- Add the chicken broth, olive oil, and rice to the pot. Bring to a boil, then reduce heat and let simmer covered for 6 minutes.
- Add fresh broccoli on top of the rice, cover again, and cook for 9 more minutes, or until the rice is fully cooked.
- Remove from heat and let sit covered for 10 minutes.
- Add in the chicken, cream of chicken soup, milk, sour cream, and half of the cheddar cheese. Mix gently.
- Pour the mixture into a greased 9×13 casserole dish and top with remaining cheese.
- Cover and bake for 15 minutes.
- Mix crushed Ritz crackers with melted butter and sprinkle over the casserole. Bake uncovered for an additional 10 minutes.
Notes
Top with fresh herbs like parsley or chives before serving. Serve with a side salad or crusty bread for a complete meal.
