Description

A comforting Chicken Burrito Casserole loaded with tender chicken, zesty beans, and gooey cheese, perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked brown rice
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, black beans, corn, brown rice, diced tomatoes, taco seasoning, salt, and pepper. Mix well.
  3. Transfer the mixture to a greased baking dish, spreading it evenly.
  4. Sprinkle the shredded cheese generously over the top.
  5. Bake for about 25-30 minutes, or until heated through and cheese is bubbly and golden brown.
  6. Garnish with fresh cilantro before serving.

Notes

For added flavor, sauté chopped onions and bell peppers before mixing them in. You can also add diced jalapeños for heat or crushed tortilla chips on top for crunch.
