- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese (plus extra for garnish)
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
- 2 cups fresh spinach or kale (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté for 5 minutes until softened.
- Stir in minced garlic and cook for 1-2 minutes until fragrant.
- Add chicken pieces, season with salt and pepper, and cook for 5-7 minutes.
- Pour in chicken broth, thyme, and basil. Bring to a boil, then reduce heat to simmer for 10-15 minutes.
- Stir in heavy cream and gradually add Parmesan cheese until melted.
- If using, stir in spinach or kale until wilted.
- Taste and adjust seasoning as needed. Garnish and serve hot.
