Description

Creamy, protein-packed chicken soup made in one pot with a silky, cheese-thickened broth and tender chicken.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese (plus extra for garnish)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 2 cups fresh spinach or kale (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté for 5 minutes until softened.
  3. Stir in minced garlic and cook for 1-2 minutes until fragrant.
  4. Add chicken pieces, season with salt and pepper, and cook for 5-7 minutes.
  5. Pour in chicken broth, thyme, and basil. Bring to a boil, then reduce heat to simmer for 10-15 minutes.
  6. Stir in heavy cream and gradually add Parmesan cheese until melted.
  7. If using, stir in spinach or kale until wilted.
  8. Taste and adjust seasoning as needed. Garnish and serve hot.
