Ingredients

- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add onions, carrots, and celery, sauté until softened.
- Stir in garlic and cook for another minute.
- Add diced chicken, broth, potatoes, thyme, bay leaf, salt, and pepper; stir to combine.
- Bring to a boil, then reduce heat and let simmer for 25-30 minutes.
- Remove bay leaf before serving. Enjoy!
