Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Stir in diced chicken and cook until browned.
- Add mixed vegetables and cook for a few minutes.
- Stir in diced tomatoes, chicken broth, dried thyme, salt, and pepper.
