Description

A comforting stovetop soup with tender chicken and softened vegetables in a flavorful tomato broth.


Ingredients

  • 1 lb chicken breast
  • 2 cups mixed vegetables (carrots, celery, peas)
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Stir in diced chicken and cook until browned.
  4. Add mixed vegetables and cook for a few minutes.
  5. Stir in diced tomatoes, chicken broth, dried thyme, salt, and pepper.
