Description

Delicious and vibrant chili lime tacos filled with flavorful shrimp and crunchy cabbage slaw, ready in about 30 minutes.


Ingredients

  • 2 tbsp chili powder
  • 1/2 tsp salt
  • 1/2 tbsp garlic powder
  • 3 large limes (juiced)
  • 1 lb shrimp (peeled and deveined)
  • 8 corn tortillas
  • 2 cups green cabbage (shredded)
  • 2 cups purple cabbage (shredded)
  • Fresh cilantro
  • Avocado cilantro dressing (optional)

Instructions

  1. In a bowl, mix together the chili powder, salt, garlic powder, and the juice of your limes.
  2. Add the shrimp to this spice and lime mixture, stirring to coat them evenly.
  3. Place the shrimp in the refrigerator for 5 to 10 minutes to marinate.
  4. After marinating, remove the shrimp from the bowl and discard the leftover marinade.
  5. Heat a skillet over medium heat and sauté the shrimp until they’re cooked through, which should only take about 2-3 minutes per side.
  6. While the shrimp are cooking, warm your corn tortillas over the flame or in a dry pan.
  7. Fill each tortilla with a generous scoop of the cabbage slaw and top with the sautéed shrimp.
  8. If desired, drizzle on some avocado cilantro dressing and sprinkle with fresh cilantro before serving.

Notes

Serve with fresh salsa, a zesty rice salad, or black beans for added nutrition. Customize with extra toppings like diced tomatoes or lime wedges.
